Vegan Indian Curry



indian curries are the best! They are full of flavor. and delicious with herbs and spices

What do you need ?
200 grams of lentils, I used pre-cooked
1 medium potato
100 gr. corn (i used canned because there were no fresh ones)
2 champions, cut into slices
1 carrot, cut into slices
1 trunk of brocoli
1 truck of coliflower
1 baby pak choy

rice for 2 persons

2 cloves of garlic, cubed or sliced
1 medium onion, sliced or cubed
litlle piece of ginger, cut into small cubes
little piece of curcuma, cut into small pieces

cilantro, as much as you like
small dash of soy sauce
pepper & salt, to taste

1 can coconut milk, creamy

You can take whatever you want to. But these are the things in the picture.

How to make ?
Step 1. Cook the rice as how it said on the package.



As you know i love it when everything is ready
and that i can get to work without having to cut things in between.
Now that all the preparation work is done,
i can be focused on preparing the food.
So…


Step 2. Cut everything as described.
Step 3. Put the garlic, onion, turmeric & ginger in a pan with a little bit of oil and a dash of soy sauce.
Step 4. Heat this up a little and keep stirring.


Step 5. Now add the vegetables and let it cook for a little, keep stirring.
Step 6. Add the coconut milk and stir everyting together.
Step 7. Let is heat up but don´t let it cook. Keep stirring.
Step 8. Add coriander, pepper & salt.

ꕥ If necessary, you can always add curcuma and curry powder for more taste.


Step 9. Take a little bowl or a mug and fill it with rice, push it well and put it upside down on a plate. Wiggle a bit with it and remove the bowl / mug. There you have your rice tower. And put the curry in a bowl.
