Vegan Buddha Bowl

You know them, everyone knows them, the famous ´Buddha Bowls´.

We had been eating this for a long time without my knowing or naming it like this. Just not as proffesional as everyone else does. Also not the pictures! We simply do it on a plate, not in a bowl. Okay, it may not be the most beautiful recipe or picture to look at but it taste good and that is the point, right ?

What do you need ?
300 gr. chickpeas, pre-cooked or quickly boiling
100 gr. corn (i used canned because there were no fresh ones)
2 handfuls of spinach
4 champions, cut into slices
1 carrot, cut into slices
half of zucchini, cut into half moons
1 trunk of brocoli
half a handful of bean sprouts
1 baby pak choy

rice for 2 persons

8 cloves of garlic, cubed or sliced
1 medium onion, sliced or cubed
litlle piece of ginger, cut into small cubes

cilantro, as much as you like
small dash of soy sauce
pepper & salt, to taste

You can take whatever you want to. But these are the things in the picture.

How to make ?
Step 1. Cook the chickpeas as how said on the package.

In the meantime, prepare everything. I love it when everything is ready and that i can get to work without having to cut things in between. Now that all the preparation work is done, i can be focused on preparing the food. So…

Step 2. Cut everything as described.
Step 3. Put the rice on the heat and start in the meantime with step 4. make the recipes down below.

I chose to make 3 different recipes with a little bit of rice in the middle.

Recipe 1:
Wok the garlic, onion and a little bit ginger in a wok pan with oil and a little bit of soy sauce. Add the chickpeas and stir well. Add some salt & pepper if you want and coriander if you like. Put it aside.

Recipe 2:
First, fry the onion and garlic with oil and a little bit of soy sauce. Add the corn and mushrooms and wok them a bit softer. Finally, add the spinach. Some pepper and salt to taste. And this recipe is already ready, put it aside.

Recipe 3:
Take the last of the onion, garlic and soy sauce and fry this together with a little oil in the pan. First, add the carrot, broccoli and pak choy and stir for a while. Then add the rest of the vegetables and wok it together with salt and pepper to taste.

The rice has already been cooked in between the recipes.

Step 5. Take a little bowl or a mug and fill it with rice, push it well and put it upside down on a plate. Wiggle a bit with it and remove the bowl / mug. There you have your rice tower.

If necessary, reheat the recipes and place them around the rice.


ꕥ You can always choose the make a egg or add some sauce.

ꕥ We always eat homemade satay sauce (peanut saus). We make the peanut butter in that recipe also by ourselfs. Soon i´ll write a recipe about it! But we ran out of peanut butter so i couldn´t make satay sauce, which is why it´s not included now.
